What makes this curry special is the 'bhuna' part. This consists of pan-frying the meat with spices. The meat cooks in its own juices, this gives its deep flavour. Its time consuming, but the end result is delicious.

Nihari is the star of Mughlai cuisine after biryani. Nihari dates back to the Nawabi days and is cooked overnight for 6 - 8 hours. Nalli Nihari is a special version of the dish with the shank and bone marrow being its main ingredient.
Sheermal/shirmal is the common delicacy of Mughlai kitchens. A mildly sweet naan made out of maida, baked in a tandoor or oven. It has similarities towards Persian saffron bread.Traditionally it goes well with Nihari.
Steamed rice goes very well with the nihari gravy. A staple food in our diet no meal goes without rice in it.
